Dreaming of a Guilin Mifen – Yangshuo Bike Festival Newsletter Part 1

We have an identity crisis at The Yangshuo Bike Festival.

Yangshuo Bike Festival

It started out being about bikes, but increasingly the bikes are about getting us in amidst the food…the Guilin Mifen aka  the worlds best noodles. These are found as the name suggests in Guilin and its surrounds: Yangshuo!

Chinese farmers know where the best noodles are at – usually down a little pathway, through a pomelo orchard, past a beer-fish pond, and then into a tiny village market for the freshest, most piquant, clear broth- full-umami noodles you’ll ever taste.

Mifen translates to rice noodles – which in Yangshuo and Guilin are made fresh daily.

Its like the Pho from neighbouring northern Vietnam but with a pork bone stock, noodles that are al-dente and shaved roasted pork – and then garnished with pickled vegetables, roasted peanuts, and chilli paste and chilli flakes and then self souped-up from a self service soup-samovar to your own liquid liking.

If you want to read about Yangshuo Cuisine (and the festival) from a real foodie – check out Cycling Yangshuo, Guilin and Longji by Lillian Chou in the very prestigious Travel and Leisure South East Asia magazine. Lillian describes the very foodie nature of last years festival in a sumptuous and mouth watering way for which we are grateful.
